The Mexican restaurant chain Costa Vida will be opening four locations in the Middle Tennessee area in the coming years, which includes locations in Spring Hill and Franklin, according to Costa Vida Director of Franchise Sales Caleb Rutter.
The Spring Hill site will be located in the Crossing Shopping District on Main Street, in a currently undeveloped lot between the Panera Bread and the Cracker Barrel. The development of a new Mexican restaurant in Spring Hill was teased by an applicant back in January, with Costa Vida corporate staff only now confirming the project’s existence.
Rutter said there would be a location developed in Franklin, another in Murfreesboro, and an undetermined fourth location somewhere in Middle Tennessee, marking the chain’s first presence in the state.
“Their territory is four locations, and it goes from Spring Hill, Murfreesboro, and up into Franklin, so they’re going to do a total of four over a four-year period roughly,” Rutter said. “Their goal is to find another location that they can have open before the one they’re building does (in Spring Hill).”
While the Franklin location has yet to be determined, design documents for the Spring Hill location have already been making their way through the city’s Planning Commission for the past few months. According to those documents, the Spring Hill location will feature an outdoor eating area, 3,200 square feet of interior space, and a drive-through for orders on the go.
Formed from a love of the beaches and food of Baja, California, Costa Vida opened its first location in 2003, and has gone on to become recognized as one of the fastest growing chains in the country. Click here to get a quick glance of Costa Vida’s menu and offerings.
