Ruby Sunshine is first of two restaurants for 231 Public Square redevelopment

One of two restaurants planned for the 231 Public Square building in Downtown Franklin was announced Tuesday morning: Ruby Sunshine, an all-day brunch concept from New Orleans, is expected to be open by this coming spring.

Ruby Sunshine will offer Big Easy twists on Southern brunch classics, including benedicts, pancakes, and French toast, as well as eye-opening cocktails. Owned and operated by the Ruby Slipper Café founders, Ruby Sunshine in Franklin will mark the first of more locations to come across the Southeast.

231 Public SquareAccording to Brian Schiedemeyer, president of Heartland Partners, the group redeveloping the building, Ruby Sunshine will be on the first floor of the office building. Owners are working with the city of Franklin on a plan for outdoor seating similar to that provided across the square by Mellow Mushroom.

“We’re excited to introduce the Franklin community to Ruby Sunshine and the New Orleans flair that our restaurants are known for,” said owner Jennifer Weishaupt. “We’re focused on expanding throughout the region and feel that the charming downtown Franklin area will be a perfect fit for our brand of Southern hospitality.”

The restaurant is planned for 4,300-square-feet with a mix of bar, booth and table seating for up to 159 guests. In addition to the outdoor area, there also will be private event space.

Jennifer and Erich Weishaupt opened the original Ruby Slipper Café in an effort to help draw people back to their Mid-City New Orleans neighborhood. Born from that cozy storefront in 2008, Ruby Slipper Restaurant Group has grown to operate 10 Ruby Slipper Café locations across the Gulf Region and will expand throughout the Southeast with Ruby Sunshine, providing new audiences with the unique flavors and hospitality that Ruby Slipper Café is known and loved for.

The menu will echo the one at Ruby Slipper Café, featuring award-winning New Orleans twists on Southern breakfast staples like BBQ Shrimp & Grits, Eggs Cochon Benedict and Bananas Foster Pain Perdu, as well as morning time cocktails like the Brandy Milk Punch, Morning Margarita, Mimosas and their award winning Bloody Marys.

231 Public Square has been redesigned with space for a rooftop restaurant as well. Schiedemeyer said that talks continue with restaurateurs about that space.
